Sugo (Italian Tomato Sauce) Recipe


Sugo is a traditional Italian tomato sauce that is made with tomatoes, garlic, basil, and olive oil. It is a versatile sauce that can be used with pasta, pizza, or other dishes.


  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 (28-ounce) cans crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish (optional)


  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook for 1 minute more.
  3. Add the crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Bring to a simmer and cook for 30 minutes, stirring occasionally.
  4. Taste and adjust seasonings as desired.
  5. Serve hot with pasta, pizza, or other dishes. Garnish with fresh basil leaves, if desired.


  • For a richer flavor, use San Marzano tomatoes.
  • If you don’t have fresh basil, you can use 1 teaspoon of dried basil.
  • To make a smoother sauce, puree it with an immersion blender or in a blender.
  • Sugo can be stored in the refrigerator for up to 5 days or in the freezer for up to 3 months.
