Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes

Instructions:

  1. Pound the chicken breasts to 1/4-inch thickness.
  2. In a shallow bowl, combine the flour, salt, and pepper. Dredge the chicken breasts in the flour mixture.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through.
  4. Remove the chicken breasts from the skillet and set aside.
  5. Add the onion and garlic to the skillet and cook for 2-3 minutes, or until softened.
