  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1 egg, beaten
  • 2 tablespoons melted butter


  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
  4. Heat a large skillet or griddle over medium heat. Grease the pan with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the hot pan for each pancake. Cook for 2-3 minutes per side, or until golden brown.

  • For fluffy pancakes, make sure to not overmix the batter. Overmixing will develop the gluten in the flour, which will make the pancakes tough.
  • If you want to make buttermilk pancakes, simply add 1 tablespoon of vinegar or lemon juice to 1 cup of milk and let it sit for 5 minutes before adding it to the batter.
  • To make your pancakes ahead of time, you can cook them and then freeze them. To reheat, thaw the pancakes in the refrigerator overnight and then cook them in a skillet or toaster oven until heated through.
